RISOTO DE QUINOA

INGREDIENTS (4 people)

200 gr Quinoa

1 purple onion

4 garlic cloves

1 yellow pepper

6 spring onions

150 gr shitake

2 tomatoes big

8 quail eggs

4 walnuts

20 leaves of basil

1 chilli pepper (malagueta)

Olive oil

Salt

Heat some olive oil in a pan, Peel and chop the garlic and half purple onion, add into the pan and fry until being transparent. Then add the quinoa and stir, add double of water plus a quarter. Leave until is ready. Meanwhile chop the rest of the ingredients and boil the quail eggs. Then start to fry the other half onion, the chilli pepper and the shitake. When is ready add the tomatoes, wait until the tomato is boiled, then add 10 leaves of basil, the quail eggs chopped and peeled, spring onions and walnuts. Stir a couple of minutes (add salt) and then is ready.

The time to cook the quinoa is similar to rice about 20 min, so be careful because to prepare the sauce you need around 5-7 minutes. The other 10 leaves of basil are to use when you serve.
